Ash Martin, Head Chef Homage - Spicers Hidden Vale entertained the crowds and chatted with local farmers about their produce during the cooking demonstraions at the 2018 Hampton Festival.
With a reputation gained as Head Chef at Spicers Peak Lodge, Ash has brought his ‘paddock to plate’ philosophy to Homage Restaurant. It’s a way of cooking that places the emphasis on locally-sourced, sustainable ingredients combined with the structured techniques and sophisticated flavours.
Together they create a signature style that saw Ash awarded a Chef Hat by both the Queensland and Australian Good Food Guides. Now, Ash and his talented team are unlocking the natural, organic and seasonal treasures of the Darling Downs and the Lockyer Valley as they aim to raise the bar even higher at Homage Restaurant.
Beer appreciation sessions
BeerMatt, Matt Kirkegaard, is the guru of beer. Based in Brisbane he is a freelance beer writer who has developed a national reputation as one of the few independent beer educators and advocates in Australia. Matt is passionate about beer and his enthusiasm is infectious. Matt generously shared his knowledge and entertained patrons during his on-stage sessions and gave patrons a flavour experience in his tasting sessions.
